Molten Chocolate Cake
(Makes 8 – 4oz. servings)


8 oz. semi-sweet chocolate
8 oz. butter
4 egg yolks
4 whole eggs
4 oz. sugar
2 Tbsp. flour
¼ tsp. salt
8 Truffles



  • Bring a pot of water to a boil and remove from heat
  • Add chocolate and butter to mixing bowl and set on top of the pot of hot water allowing the steam to melt the chocolate and butter
  • Melt 1/2 a stick of butter
  • Using a brush, coat ramekins with butter
  • Roll sugar around the sides of the ramekins
  • Clean the edge of the ramekins to keep the batter from running over
  • Prepare eggs by adding 4 egg yolks, 4 whole eggs and sugar/whip until thick airy and light yellow
  • Mix in flour and salt
  • Combine egg mixture to chocolate mixture and fold until mixed
  • Spoon fill ramekins 3/4 full
  • Insert truffle into the middle of each one

Bake at 400 degrees for 12 minutes
